Faux Shrimp Chevêche

Faux Shrimp Chevêche (Brenda - From Mary Davey)

1/4 cup shredded unsweetened coconut
2 tsp vegetable oil
3/4 lb shrimp, peeled and deveined
2 T cilantro, finely chopped
2 tsp fresh ginger, grated
2 T fresh lime juice
2 tsp soy sauce
1/2 tsp chili oil
ground black pepper

In a dry skillet toast coconut until golden. Set aside. In skillet over medium low heat cook shrimp for 2 minutes (or until done).  Chop coarsely and add remaining ingredients. Serve with tortilla chips ( I use "scoops).

Hint: (quite critical actually).  Once you put this together, serve it immediately - if you leave it too long, the lime juice works on the shrimp and they go kinda mushy and the coconut goes soft.  So what I do is get it all ready in four separate bowls (coconut, shrimp, cilantro, everything else) and then toss it together at the last minute....
